Grated zucchini and squeeze out as much liquid as possible.
In a mix bowl combine grated zucchini, Tapioca flour, egg, parsley. Transfer the mixture into a lightly greased frying pan and spread out in a circle.
Fry on a low heat covered with a lid for about 5 minutes and flip, then add toppings and fry for another 5 minutes.
